Prep Time: 40 mins
Cook Time: 15 mins
Total Time: 55 mins
Cuisine: Ukrainian
Serves: 4 servings

Ingredients

  1. 2 cups all-purpose flour
  2. 1/2 tsp salt
  3. 1 large egg
  4. 1/2 cup water
  5. 2 cups fresh blueberries
  6. 1/4 cup sugar
  7. 1 tbsp lemon juice
  8. Butter (for serving)
  9. Sour cream (for serving)

Instructions

  1. In a large mixing bowl, combine flour and salt. Create a well in the center and crack the egg into it.
  2. Gradually add water while mixing with a fork, then knead the dough by hand for 7-10 minutes until smooth and elastic. Cover the dough with a clean kitchen towel and let rest for 30 minutes.
  3. While dough rests, prepare the blueberry filling. In a separate bowl, mix fresh blueberries, sugar, and lemon juice. Gently mash some berries to release juices but keep most whole.
  4. Roll out the rested dough on a floured surface to approximately 1/8 inch thickness. Use a round cookie cutter or glass (about 3 inches diameter) to cut circular dough pieces.
  5. Place a small spoonful of blueberry filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch edges firmly to seal completely.
  6. Prepare a steamer basket by lightly greasing with oil to prevent sticking. Arrange vareniki in a single layer, ensuring they do not touch each other.
  7. Steam the vareniki over boiling water for 12-15 minutes until dough becomes translucent and slightly puffy.
  8. Carefully remove vareniki from steamer and plate. Serve warm with a dollop of butter and sour cream on top.

Tips

  1. • Ensure your dough is well-kneaded and rested to achieve the perfect elastic texture • Don't overfill the vareniki - a small spoonful of blueberry mixture prevents bursting during steaming • Use a non-stick steamer basket or lightly oil it to prevent sticking • Keep vareniki in a single layer while steaming to ensure even cooking • For extra flavor, try adding a hint of cinnamon or vanilla to your blueberry filling • Serve immediately while warm for the most authentic and delicious experience • If fresh blueberries are out of season, frozen berries work wonderfully too
