Cuisine: Pastry
Serves: 4 servings

Ingredients

  1. 4 sheets of filo pastry
  2. 2 apples, peeled and diced
  3. 1 teaspoon cinnamon
  4. 2 tablespoons brown sugar
  5. 50g melted butter
  6. 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. Prepare the apples by peeling and dicing them into small, uniform cubes approximately 1cm in size.
  3. In a mixing bowl, combine the diced apples with cinnamon and brown sugar. Gently mix until the apples are evenly coated with the spice and sugar mixture.
  4. Lay out one sheet of filo pastry on a clean, dry surface. Brush the entire sheet lightly with melted butter using a pastry brush.
  5. Place a second filo sheet directly on top of the first, and brush again with melted butter.
  6. Spoon the spiced apple mixture onto the center of the filo sheets, leaving a border of about 5cm around the edges.
  7. Carefully fold the sides of the filo pastry over the apple filling, creating a neat parcel. Ensure the edges are sealed by brushing with additional melted butter.
  8. Brush the entire exterior of the parcel with beaten egg, which will help create a golden, crisp finish.
  9. Transfer the parcel to the prepared baking sheet, placing it seam-side down.
  10. Repeat the process to create additional parcels with the remaining ingredients.
  11. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.
  12. Remove from the oven and let cool for 5 minutes before serving. The parcels can be served warm, optionally dusted with powdered sugar or accompanied by vanilla ice cream.

Tips

  1. Keep your filo pastry covered with a damp cloth while working to prevent it from drying out and becoming brittle.
  2. Use a light touch when brushing butter between layers to avoid tearing the delicate pastry.
  3. Make sure your apple pieces are uniformly diced to ensure even cooking and consistent texture.
  4. Don't overfill the parcels – this can cause them to burst during baking.
  5. For an extra touch of elegance, sprinkle some sliced almonds on top before baking for added crunch.
  6. Serve immediately after cooling for the crispiest texture, as filo pastry can become soggy if left too long.
  7. If you're not serving immediately, you can reheat the parcels in a 180°C oven for 5 minutes to restore their crispness.
