Cuisine: Slovak
Serves: 12 servings

Ingredients

  1. 500g all-purpose flour
  2. 200ml milk
  3. 100g sugar
  4. 100g butter
  5. 2 eggs
  6. 1 packet dry yeast
  7. 1/2 teaspoon salt
  8. Filling: 200g ground nuts or poppy seeds
  9. 100g sugar (for filling)
  10. 100ml milk (for filling)

Instructions

  1. In a small bowl, warm the milk to lukewarm temperature and dissolve the dry yeast with a pinch of sugar. Let it sit for 10 minutes until it becomes frothy and active.
  2. In a large mixing bowl, sift the flour and create a well in the center. Add the softened butter, sugar, salt, eggs, and the activated yeast mixture.
  3. Knead the dough thoroughly for about 10-15 minutes until it becomes smooth, elastic, and no longer sticks to the sides of the bowl. Cover with a clean kitchen towel and let it rise in a warm place for approximately 1 hour or until doubled in size.
  4. While the dough is rising, prepare the filling by mixing ground nuts or poppy seeds with sugar and milk in a separate bowl. Stir until it forms a thick, spreadable paste.
  5. Once the dough has risen, punch it down and divide it into equal portions. Roll each portion into a thin rectangular shape on a floured surface.
  6. Spread the nut or poppy seed filling evenly across each rolled-out dough rectangle, leaving a small border around the edges.
  7. Roll up each rectangle from the long side, creating a spiral roll. Pinch the edges to seal and place on a baking sheet lined with parchment paper.
  8. Allow the rolls to rise again for another 30 minutes in a warm place. Preheat the oven to 180°C (350°F).
  9. Brush the tops of the rolls with beaten egg for a golden shine. Optional: sprinkle additional sugar or ground nuts on top.
  10. Bake in the preheated oven for 20-25 minutes until the rolls are golden brown and sound hollow when tapped.
  11. Remove from the oven and let cool on a wire rack. Optionally, dust with powdered sugar before serving.

Tips

  1. • Ensure your yeast is fresh and active - the frothy texture is crucial for perfect dough rise • Use lukewarm milk when activating yeast to create the ideal environment for fermentation • Let the dough rise in a warm, draft-free area for the best texture • Don't rush the rising process - patience is key to achieving soft, fluffy rolls • Use a clean kitchen towel to cover the dough during rising to prevent drying • For an extra golden finish, brush rolls with beaten egg just before baking • Allow rolls to cool completely on a wire rack to maintain their crisp exterior • Store in an airtight container and enjoy within 2-3 days for maximum freshness
